What You’ll Need

Gather the following ingredients to create your flavorful rice bowls.

For the Marinade

  • 2 cloves garlic, crushed
  • 1/4 cup soy sauce (60ml)
  • 3 tbsp sweet chili sauce (plus extra for serving)
  • 1 1/2 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp honey
  • 1 tbsp peanut oil
  • 1 tbsp sesame oil
  • 1/2 tbsp crushed ginger

For the Chicken

  • 600 g boneless, skinless chicken thighs (1 lb 5 oz)

For the Rice and Veggies

  • 2 pouches microwave brown rice (2 x 250 g, 8.8 oz)
  • 1/4 green cabbage, shredded
  • 1 large carrot, spiralized, julienned, or grated
  • 1 spring onion, finely sliced
  • 1 cup frozen edamame beans (125g)

For the Topping

  • 1 lime, cut into wedges
  • 2 tbsp mayonnaise
  • 1 tsp sweet chili sauce (for the mayo mix)
  • 1 1/2 tbsp toasted sesame seeds

Use low-sodium soy sauce for less salt.
Replace chicken thighs with chicken breasts if preferred.

Substitutions & Swaps

  • Rice vinegar can be swapped with apple cider vinegar.
  • Use vegetable oil instead of peanut oil.
  • Substitute green cabbage with bok choy.
  • Replace edamame with peas for a different flavor.

How to Make It

Let’s get started on this delicious recipe!

1. Preheat

3. Reserve Sauce

Reserve 1/4 cup of the sauce for the rice and edamame later.

4. Prepare Chicken

Cut chicken thighs into 1.2-inch pieces and season with salt and pepper before coating them in the marinade.

5. Bake Chicken

Spread the marinated chicken in a roasting dish and bake for 20 minutes, until golden brown and caramelized.

6. Cook Rice & Veggies

While the chicken cooks, microwave the brown rice according to package directions, shred cabbage, spiralize carrot, and slice spring onion.

7. Prepare Mayo

In a small bowl, mix together mayonnaise and a teaspoon of sweet chili sauce.

8. Toast Sesame Seeds

Toast sesame seeds in a large wok over medium-high heat for a couple of minutes until golden, then remove.

9. Stir-Fry Edamame

Add frozen edamame and half of the reserved sauce to the wok and stir-fry until warm and sticky.

10. Combine Ingredients

Add cooked rice, sautéed cabbage, and remaining sauce to the wok, cooking until the cabbage is tender.

11. Broil Chicken

Once the chicken is done, switch the oven to broil and grill the chicken until lightly charred and the sauce is gooey, about 2-3 minutes.

12. Serve

Serve by dividing the warm rice mixture into bowls, topping with chicken, spiralized carrot, edamame, spring onion, toasted sesame seeds, lime wedges, and a dollop of sweet chili mayo.

How to Store It

Fridge: Store in an airtight container for up to 3 days.
Freezer: No, best enjoyed fresh for quality.
Reheat: Microwave for 2-3 minutes until warmed through.

Tips for Best Results

  • Ensure the chicken is marinated for at least 30 minutes for deeper flavor.
  • Use fresh vegetables for the best texture and taste.
  • Don’t skip toasting the sesame seeds; it enhances their flavor.
  • Adjust the amount of sweet chili sauce to suit your spice preference.

Serving Suggestions

  • Pair with a cold beer or sparkling water for a refreshing beverage.
  • Serve alongside a simple green salad for added freshness.
  • Perfect for meal prep, great for lunches during the week.
